This brownie is cakey and indulgent like you would expect it to be but it won't give you a stomachache afterwards! Silken tofu is the secret to the soft texture, so this dessert is filled with protein as well. The coconut sugar and fresh pear naturally sweeten the brownie.
Healthy Pear and Pecan Brownie [Vegan, Gluten-Free]

- 5.3 ounces of silken tofu
- 1/4 cup of coconut sugar
- 1 tablespoon of cocoa powder
- 1 pinch of baking soda
- 1 pinch of cinnamon
- 3.5 ounces of vegan dark chocolate
- 1 tablespoon of vegan dark chocolate chips
- 1 teaspoon coconut oil
- 1/4 cup rice flour
- 1/4 cup and 1 tablespoon pecans
- 1 pear
Preparation
- Preheat the oven to 360°F.
- Whisk the silk tofu with the coconut sugar. Add the raw cocoa, baking soda, and the cinnamon.
- Stir in the dark chocolate chips.
- Chop the dark chocolate and melt it in a bain-marie with coconut oil.
- Add the melted chocolate to the dough then mix in the flour.
- Chop half of the pecans and add to the dough.
- Grease the mold with coconut oil. Pour the dough.
- Peel the pear and cut into slices. Arrange the slices on top and put the rest of the pecans.
- Bake for 18 minutes and let cool completely. Leave to rest at least 10 hours before tasting.
