Banana Blondies With Caramel Frosting [Vegan, Gluten-Free]

For the Blondies:
- 2 ripe bananas, mashed
- 1/2 cup coconut oil, soft
- 1 teaspoon vanilla extract
- 1/2 cup coconut sugar
- 1 cup gluten-free oat flour
For the Frosting:
- 8 Medjool dates
- 3 tablespoons coconut oil
- 3 tablespoons almond milk
- 1 teaspoon vanilla extract
- Pinch sea salt
- 1 cup powdered sugar
- Almond milk, to thin
Preparation
- Preheat oven to 350°F. Line an 8×8-inch baking dish with parchment paper.
- In a bowl, beat together the bananas, coconut oil, and vanilla until smooth. Add the coconut sugar and oat flour and mix until no lumps remain.
- Pour batter into prepared baking dish and bake for 25-30 minutes or until toothpick comes out clean.
- While blondies are baking, add dates, coconut oil, almond milk, vanilla, and sea salt to a high-speed blender. Process on high until smooth. Add powdered sugar and pulse until frosting is thick and smooth. Add a tablespoon or two of almond milk to thin, if needed.
- Once blondies have cooled, spread frosting over top. Cut into 12 bars and serve.
