The ULTIMATE April Fool's Cake!

For the Meatloaf:
- 1/2 cup panko breadcrumbs
- 1/2 cup milk
- 2 tablespoons olive oil
- 1 small yellow onion (peeled and minced)
- 3 cloves garlic (peeled and minced)
- 2 pounds ground beef
- 1 large egg
- 1/2 cup parsley (minced)
- 1 tablespoon Worcestershire sauce
- 1/2 cup parmesan cheese (freshly grated)
- Kosher salt and freshly ground black pepper
For the Ketchup Glaze:
- 2 tablespoons ketchup
- 1 tablespoon light brown sugar
- 2 teaspoons apple cider vinegar
For Serving:
- 3 cups store-bought or leftover mashed potatoes
- 1 cup frozen peas (thawed)
- Preheat the oven to 350ºF. Spray two 9-inch cake pans with cooking spray and line with parchment. Set aside.
- For the Meatloaf:
- In a small bowl combine the panko and milk, let sit until the milk is absorbed.
- In a small saute pan add the olive oil and heat over medium high heat. Add the onion and garlic and cook until translucent, about 5 minutes. Set aside to cool.
- In a large bowl combine the ground beef, egg, parsley, Worcestershire sauce, parmesan cheese, panko mixture and onion mixture. Season with salt and pepper and mix to combine. Divide evenly into the two cake pans and press into flat disks filling the pans. Spread the tops with the ketchup glaze and transfer to the oven to bake for 15-20 minutes. Remove from oven and let cool.
- Using a bowl trim the loaves into 6 ½-inch circles. Transfer one meatloaf to a cake stand and top with a layer of mashed potatoes. Evenly spread the peas on top of the mashed potatoes and top with the remaining meatloaf. Spread mashed potatoes around the top and outside of the cake. Using a piping bag fitted with a star tip, pipe mashed potatoes around the base of the cake and around the edge of the top of the cake. Serve.
- For the Ketchup Glaze:
- In a small bowl combine the ketchup, light brown sugar and apple cider vinegar. Set aside until ready to use.
