For the Crepes:
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon Kosher salt
- 3 cups milk
- 8 large eggs
- 4 tablespoons unsalted butter (melted, plus more for brushing)
- gel food coloring (red, orange, yellow, green, blue, purple)
For Whipped Cream Filling:
- 3 cups heavy cream (chilled)
- 1/3 cup confectioners’ sugar
- ½ teaspoon Kosher salt
- 1 teaspoon vanilla extract
For the Vanilla Glaze:
- 2 cups confectioners' sugar (sifted)
- 1/2 teaspoon Kosher salt
- 4 tablespoons whole milk
- 4 tablespoons lemon juice
- 1 teaspoon vanilla extract
- gel food coloring (red, orange, yellow, green, blue, purple)
- For the Crepes: In a blender combine the flour, sugar, salt, milk, eggs and butter. Blend until smooth, about 30 seconds. Let sit at room temperature for at least 15 minutes or refrigerate overnight.
- Divide the crepe batter into 6 bowls. Using the gel food coloring, dye one bowl red, one orange, yellow, green, blue and the last purple.
- Heat a medium skillet over medium heat. Lightly butter the pan then add 1/4 cup of batter and swirl to evenly cover the bottom. Let cook 2-3 minutes until lightly golden and flip the crepe to cook an additional 30 seconds. Remove from the skillet and let cool completely. Repeat with remaining batters. Each color should make 4-5 crepes.
- For the Whipped Cream Filling: In a medium bowl, whisk the heavy cream until soft peaks. Slowly add in the confectioners’ sugar, salt and vanilla extract. Whisk until stiff peaks. Keep cold until ready to use.
- To Assemble:Add one purple crepe to a rotating cake stand. Top with a layer of whipped cream and cover with another purple crepe. Repeat using all the purple crepes. Repeat the process with the remaining rainbow colors, blue, green, yellow, orange, and red ending with a red crepe on top.
- Slowly spin the cake stand and drizzle the different colors of the rainbow glaze over the crepe cake creating a tie-dye look. Keep cold until ready to serve and slice.
- For the Vanilla Glaze: In a medium bowl, whisk together the confectioners’ sugar, salt, milk, lemon juice and vanilla extract. Divide into 6 bowls and dye the colors of the rainbow, red, orange, yellow, red, blue and purple. Keep at room temperature until ready to use.
