Actor Jessica Biel has revealed her go-to-recipe after a long busy day, and it is completely vegan.
“I’m a big fan of easy-make, easy-bake vegan purees,” Biel shared in an interview with Well and Good magazine. “Which I think can be a nice, light supper option.” She added, “You cook the vegetables, roasting them in the oven, adding salt, pepper, and your favorite spices. Then, you put it in the blender and boom – you’ve made yourself a really light, really healthy, gorgeous soup that anybody can enjoy pretty easily.”
Biel, who is married to singer Justin Timberlake and has a one-year-old son, Silas, is dairy-free at home. “Honestly I just feel better when I don’t have gluten or wheat or dairy. My digestion is better, I feel better, I have more energy,” the actor told Mind Body Green at the beginning of the year. The family even grow their own vegetables, she added. “Every couple of days, [we] pick spinach and pick radishes and things and throw them together and it’s wonderful. That’s probably one of the coolest things I think about living in California is that we can really grow all year long.”
Fellow actor, Jessica Chastain, is also a fan of quick and easy vegan cooking; the star recently shared one of her recipes for vegan pancakes on her Instagram account. Chastain captioned the post, “Sundays are for vegan banana pancakes.” The recipe grabbed the attention of actor and cooking enthusiast Jennifer Garner, who commented on the post, “Beautiful – we will have to try these!”
Chastain is well versed in vegan cooking, because she, herself, is a vegan. The star made the switch to the lifestyle in 2005 for health reasons, the actor told W Magazine last year.
“My cholesterol was very high…I was in my 20s, and I thought I don’t want to start taking cholesterol pills.” She explained. “I found myself going to veganism because a friend of mine had a two-week vegan food delivery program she wasn’t going to use so I used it, and immediately I just had more energy than I’ve ever had in my life.”
